Omega-3 Banana Muffins

This recipe contains flaxseeds, walnuts and hemp seeds, which are three of the top plant sources of healthy omega-3 fats. They are very child friendly (especially with chocolate)! and chopping the walnuts very finely is a good idea if you are making them for kids.
2 tbsp ground flaxseed mixed with 7tbsp water
200g wholemeal self-raising flour
50g self-raising flour
40g ground almonds
1.5 tsp baking powder
½ tsp bicarbonate of soda
¾ tsp salt
100g coconut sugar
50g walnuts, chopped (plus walnut halves for top, optional)
2 tbsp hempseeds
2tsp vanilla extract
4 tbsp olive oil
Splash of almond milk
4 ripe bananas
Optional add-ins
70g raisins (soaked in boiling water for 5 minutes)
And/or 40g 85% dark chocolate, chopped
1. Make the flax egg, by mixing the ground flaxseed and water, stir and leave to rest for 5 minutes, while you prepare the other ingredients
2. Weigh and thoroughly mix all the dry ingredients
3. Mash 3 bananas in a bowl, reserving the fourth
4. Add all the dry ingredients to the bowl followed by the wet ingredients and mix thoroughly, adding almond milk as needed to achieve a smooth, thick batter
5. Chop the remaining banana and fold into the mixture, along with the raisins and/or chocolate if using
6. Divide between 10 muffin cases, top with walnut halves if liked and bake at 180°C for 25-30 minutes, or until a skewer comes out clean
7. Leave to cool for 10 minutes and enjoy
